Stuffed Green Peppers

This is best summer recipe because it literally costs $1 for the rice and $0.48 a green pepper since they are on sale. We usually eat about a pepper each so that’s $2 whoppers!

Stuffed Green Peppers
Yield 4 large stuffed green peppers or 8 halves

1 pkg Spanish Rice (or make your own!)
4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed
1 large onion, diced
1/2 lb (about 8 ounces) sausage or ground beef
1 tsp Italian seasoning
1/2 cup grated Parmesan cheese
salt and fresh ground black pepper to taste
1/4 cup grated Mozzarella cheese

1)Cook rice according to package directions.

2)Preheat oven to 375F. Cut and hollow out peppers. (If you trim a very thin slice off the bottom, they will sit flat in the pan.) Or simply cut in half. Place peppers in a greased pan.

3)Dice onion and saute with some olive oil until translucent and soft. Add sausage or ground beef and cook until browned. Add to cooked rice. Add the Parmesan cheese and Italian seasonings. Combine and fill the peppers. Stuff them full to the brim so the rice is packed in there. Top with Mozzarella Cheese. 

4)Bake peppers until cheese is melted and bubbly about 10 mins for a crunchy pepper, longer for a softer pepper.
